300g sushi rice
200g frozen soya beans
150ml teriyaki sauce
1 large garlic clove, crushed
Zest and juice 1 lemon
4 smoked mackerel fillets, skin removed
4 spring onions halved and shredded lengthways
Wasabi paste to serve (optional)


1. Cook rice following packet instructions
2. Add the soya beans to the pan for the final 3 mins
3. Mix together teriyaki sauce, garlic, lemon zest and juice
4. Heat a non-stick fry pan over medium-high heat
5. Brush a little teriyaki sauce mixture over mackerel
6. Sear fillets, skin-side down 1-2 mins
7. Turn add teriyaki sauce mixture to the pan
8. Bring to a bubble cook sauce 1-2 mins more
9. The fish will warm through and the sauce will thicken
10. Spoon rice into bowls top with a mackerel fillet
11. Spoon over sauce and sprinkle over spring onions
12. Serve with a blob of wasabi paste, if desired
