Ingredients

2 x 150g fillets Spanish mackerel
2 tablespoons vegetable oil for cooking
Salt and pepper
2 cups mesclun lettuce
2 large field mushrooms
8 large cherry tomatoes (halved)
2 cloves garlic (finely chopped)
4 tablespoons olive oil
2 tablespoons balsamic vinegar

Instructions

1. Preheat barbecue to medium high heat
2. Mix 3 tablespoons olive oil, vinegar and garlic together in medium sized bowl
3. Add mushroom toss through vinaigrette with pinch of salt and pepper
4. Marinate for 20 minutes
5. Barbecue mushroom on bar grill, flat side down 3 minutes
6. Rotate once to create criss-cross pattern
7. Toss cherry tomatoes in remaining marinade
8. Barbecue on flat grill 1-2 minutes until golden
9. Toss asparagus in 1tablespoon olive oil with pinch of salt and pepper
10. Grill for 3-4 minutes until tender
11. Toss mackerel in vegetable oil with pinch of salt and pepper
12. Place on bar grill and barbecue 4-5 minutes each side (lid down) until cooked
13. Toss mushroom, tomatoes, asparagus and mesclun leaves together
14. Divide between plates
15. Place mackerel on top of salad and Serve immediately
