400ml coconut cream
Finely grated zest and juice of 1 lemon
1 tablespoon fish sauce
1 tablespoon brown sugar
2 teaspoons sambal Oelek (Indonesian hot sauce)
1 crushed garlic clove
4 Gemfish fillets
1 cup baby spinach leaves
Shredded green onion
Sliced chilli (optional)


1. Combine in a large fry pan coconut cream, lemon zest and lemon juice
2. Add fish sauce, sugar, Sambal Oelek and garlic 
3. Bring to the boil on high while stirring
4. Reduce heat to low and add Gemfish fillets
5. Simmer gently covered 8-10 minutes until flakes easily when tested with a fork
6. Remove fish and stir through baby spinach
7. Served fish on steamed rice drizzled with sauce and topped with onion and chilli
