4 Spanish mackerel fillets, 250g each
1 tablespoon olive oil
Half a lime
Fine sea salt
1/4 cup sliced almonds
1 cup dry white wine
5 tablespoons cold unsalted butter, cut into cubes
1/4 teaspoon black pepper
2 garlic cloves, grated on a Micro plane or minced
2/3 cup sliced, pitted olives
3 tablespoons chopped mint leaves


1. Heat oven to 200 degrees C
2. Place mackerel on a rimmed baking sheet
3. Drizzle fillets with oil and juice from the lime
4. Sprinkle with salt
5. Roast 7-10 minutes, until cooked to taste
6. Spread out almonds in a large skillet set over medium heat
7. Toast until fragrant and lightly golden about 3 minutes
8. Pour almonds onto a plate to cool
9. Add wine to skillet let reduce until syrupy, about 3 minutes
10. Whisk in butter until smooth
11. Stir in a pinch of salt, pepper and garlic let heat 20 seconds to warm garlic
12. Remove from heat and stir in olives and almonds
13. Spoon olive sauce over fish, garnish with mint, and serve
