2 Mackerel fillets
3 Cloves of garlic sliced
Broad leaf parsley
1 teaspoon smoked paprika
Splash of red wine vinegar
Cracked black pepper
Extra-virgin olive oil


1. Heat some olive oil in a fry pan
2. Add Mackerel fillets fry 2-3 minutes skin side down
3. Turn, season and cook an additional 60 seconds
4. Add a splash more olive oil to fry pan
5. Add garlic, parsley, vinegar, pepper and paprika
6. Mix and fry for 1 minute
7. Pour mixture over the mackerel fillets and serve
