Ingredients

3 carrots peeled halved lengthways
1 Lebanese cucumber
5cm piece ginger peeled cut into matchsticks
4 shallots thinly sliced diagonally
2 nori sheets thinly sliced
2 tablespoons mirin
1 tablespoon salt reduced soy sauce
1 tablespoon sesame oil
1 garlic clove crushed
4 x 180g Spanish Mackeral steaks
2 tablespoons sesame seeds toasted

Instructions

1. Using a mandolin fitted with matchstick blade attachment
2. Slice carrot cut side down into long matchsticks
3. Repeat with cucumber rotating so that most pieces have skin and flesh
4. Discard seeds and central core
5. Place carrot, cucumber and ginger in a bowl
6. Add shallot and nori toss to combine
7. Whisk together mirin, soy sauce, oil and garlic in a small bowl
8. Spray a fry pan with cooking oil spray
9. Heat on high cook fish 3 minutes each side until brown, just cooked through
10. Serve fish topped with salad
11. Drizzle over dressing and scatter with sesame seeds
