Ingredients

1/4 cup soy sauce
1 tablespoon chopped coriander (plus additional, to serve)
1 inch ginger (grated)
1 red chili pepper (long, finely chopped, plus additional, to serve)
1 clove garlic (crushed)
4 Spanish Mackeral steaks (185g each)
1/4 cups coconut milk
2 teaspoons brown sugar
1 tablespoon lime juice

Instructions

1. Preheat the oven to 325°F.
For marinade
1. Combine soy sauce, coriander, ginger, chili and garlic in a small bowl
2. Place each piece of fish on a 12-inch square piece of parchment paper
3. Spoon a little marinade over fish, reserving 1 tablespoon
4. Gather corners of paper together tie with string to make loose packets
5. Place on a baking tray
6. Bake 12-15 mins, until fish flakes easily with a fork
7. Combine coconut milk, sugar, reserved marinade in a small saucepan
8. Simmer on low heat stirring until sugar dissolves
9. Simmer for 2 mins. Stir in lime juice
10. Sprinkle fish with additional chili and coriander
11. Serve with sauce
