Ingredients

2 teaspoons Cajun seasoning
4 x 175g Mirror Dory fillets
Olive oil cooking spray
Fresh corn salad
2 corn cobs, kernels removed
250g green beans, trimmed
1 small red onion, finely chopped
1 lemon, juiced
1/4 cup coriander leaves, roughly chopped

Instructions

Make salad
1. Half-fill a saucepan with water
2. Bring to the boil over high heat
3. Add corn and beans
4. Cook 3 to 4 minutes until beans turn bright green
5. Drain and refresh under cold water
6. Pat dry with paper towel
7. Combine corn, beans, onion, 2 tablespoons lemon juice, coriander in a bowl
8. Season with salt and pepper
9. Sprinkle seasoning over both sides of fish
10. Gently rub onto surface with fingertips
11. Heat a large, non-stick frying pan over medium-low heat
12. Spray with oil. Cook fish, in batches
13. 3 to 4 minutes each side or until just cooked through
14. Serve with salad
