Ingredients

4 Mirror Dory fillets
Freshly ground black pepper
1 bunch mini asparagus
1 Tablespoon oil
1 small (200g) leek, sliced
2 cloves garlic, chopped
1 red chilli, finely chopped, optional
2 teaspoons finely chopped ginger
2 teaspoons finely chopped kaffir lime leaves, optional
100g sliced mushrooms
375mL fish stock
1 tablespoon Maggi Authentic Thai Fish Sauce
375mL can Carnation Light & Creamy Cooking Milk
1/2 cup thinly sliced green (spring) onions

Instructions

1. Lay fillets onto chopping board skin side up
2. Sprinkle with pepper
3. Divide asparagus evenly between fish
4. Roll firmly, securing with toothpicks. Set aside
5. Heat oil in a large saucepan over medium heat
6. Add leek, garlic, chilli, ginger, leaves and mushrooms
7. Cook 5 minutes or until fragrant and mushrooms are tender
8. Add stock and fish sauce, bring to the boil, simmer 5 minutes
9. Add carnation evaporated milk and fish rolls
10. Simmer 15 minutes or until fish is cooked through
11. Stir through green onions
