Ingredients

1/4 bunch Basil
1/4 bunch Dill
1/4 bunch Mint
1/4 bunch Parsley
1 tablespoon baby capers – 10 finely chopped
2 tablespoons sushi vinegar
Extra virgin olive oil
1 Cucumber – cut thin like spaghetti
2 spring onions – finely sliced
1tsp Massel powdered chicken stock
2 cups bread crumbs – in a large bowl
3 eggs – in a large bowl, beaten
1 cup flour – in a large bowl
500g mirror dory – sliced into fillets
Oil – for deep frying

Instructions

1. Chop together mint, basil, dill and parsley
2. Mix together chopped herbs, chopped capers
3. Add 1tablespoon sushi vinegar and 2tablespoons olive oil
3. Set aside
4. In a large mixing bowl combine cucumber, remaining whole capers
5. Add sushi vinegar and 2tablespoons olive oil and spring onions
6. Mix together with hands to combine all ingredients, set aside
7. Add Massel chicken stock to the breadcrumbs and mix
8. Heat oil for deep frying. (170 degrees)
9. Coat fish fillets in flour, dip into the egg wash and coat in bread crumbs
10. Deep-fry in batches. Cook one minute until golden and crispy
11. Plate fish with cucumber salad
12. Salsa Verde to serve
