375g Snapper fillets
Ground black pepper
Kosher salt
250g crème fraiche
3 tablespoons Dijon mustard
1 tablespoon mustard (whole-grained)
2 tablespoons shallots (minced)
2 teaspoons capers (drained)


1. Preheat the oven to 425 degrees F
2. Line a sheet pan with parchment paper
3. Place the fish fillets skin side down on the sheet pan
4. Sprinkle generously with salt and pepper
5. Combine in a bowl crème fraiche, mustards, shallots and capers
6. Add 1 teaspoons salt, 1/2 teaspoon pepper
7. Spoon sauce evenly over fish fillets
8. Making sure the fish is completely covered
9. Bake 10 to 15 minutes depending on thickness of the fish
10. Bake until it is barely done fish will flake easily at the thickest part
11. Serve hot or at room temperature with sauce from the pan spooned over top
