8-10 sea scallops
Salt and black pepper
1 tablespoon vegetable oil
1 1/2 tablespoons shallots, minced
1/4 cup white wine
1/2 teaspoon Dijon mustard
1/2 tablespoon butter


1. Using a paper towel, pat scallops dry on all sides
2. Season with salt and pepper
3. Heat vegetable oil in a skillet over medium-high heat
4. Once oil is hot (should be shimmering with wisps of smoke coming off surface)
5. Carefully add scallops
6. Cook until scallops are nicely browned on one side, about 1-2 minutes
7. Turn and cook until the second side is well browned, another 1-2 minutes
8. Remove pan from heat and transfer scallops to a plate
9. Place pan back on low heat add minced shallots, cook stirring frequently
10. Cook until softened slightly and starts to brown about 1 minute
11. Add white wine and cook 1-2 minutes more
12. Scrape any browned bits from the surface of the pan
13. Add Dijon mustard and butter, stirring until well incorporated and smooth
14. Remove pan from heat add back the scallops, turning in the sauce to coat
15. Serve immediately
