Ingredients

30g butter
2 shallots or 1 small onion, finely diced
100g mushrooms, diced
12 scallops
300ml champagne
Salt and pepper, to taste
1 egg yolk
50ml cream

 Instructions 

1. Melt butter in large fry pan over medium heat
2. Saute shallots 5 minutes or until tender
3. Stir in mushrooms saute until tender
4. If the mushrooms release a lot of juice, drain it off
5. Add scallops and stir
6. Pour champagne over scallops cook 10 minutes over low heat
7. Season with salt and pepper
8. Strain sauce from pan then remove from heat and cover
9. Strain sauce into a clean saucepan
10. Heat and reduce over high heat until half its original volume
11. Beat together egg yolk with cream in a bowl
12. Stir into the reduced sauce
13. Add scallops and mushrooms to fry pan cook over medium heat 2 minutes
14. Serve immediately
