Ingredients

500g scallops
Salt and black pepper to taste
2 tablespoons plain flour
2 tablespoons butter
225ml double cream
1 tablespoon pesto
1 tablespoon capers

 Instructions 

1. Season scallops with salt and pepper, then coat with flour
2. Heat butter in a fry pan
3. Once melted, add scallops. Cook 1 to 2 minutes each side
4. Add pesto and capers stir well
5. Stir in cream
6. Bring to the boil
7. Remove from heat and serve
