1/2cup plain flour
1 egg
3/4cup dried breadcrumbs
1 tablespoon Moroccan seasoning
4x185g boneless flake fillets
2 pieces lavish bread cut into triangles
Olive oil cooking spray
Lemon wedges to serve
Tomato Salad
3 large tomatoes diced
2 Lebanese cucumbers diced
1 small red onion thinly sliced
1 lemon rind finely grated and juiced
1 cup flat leafed parsley leaves roughly chopped


Make salad

1. Combine tomato, cucumber, onion, rind 1/4 cup lemon juice, parsley in a bowl
2. Cover and refrigerate
3. Place flour on a plate
4. Combine lightly beaten egg and 2 tablespoons cold water in shallow bowl
5. Combine breadcrumbs and Moroccan seasoning on a plate
6. Coat fish 1 at a time in flour, egg then breadcrumb mixture
7. Gently pressing breadcrumbs on with finger tips
8. Preheat oven to 220% C spray both sides of fish and lavish bread with oil
9. Placing on separate baking trays
10. Bake lavish bread for 5 minutes or until toasted, set aside
11. Bake fish for 10 minutes or until golden and cooked through
12. Serve fish with lavish bread, salad and lemon wedges
