Plain flour, to dust
6 whole sardines, cleaned, gutted
Extra virgin olive oil, to shallow-fry
Chopped flat-leaf parsley
Lemon wedges, to serve

Santorini sauce
2 tablespoons extra virgin olive oil
1/2red onion, finely chopped
1 clove garlic, crushed
60 ml (¼ cup) sweet white wine
75g (¼ cup) baby capers, drained
2 large tomatoes, finely chopped
2 bay leaves


To make sauce
1. Heat oil in a large fry pan over medium heat
2. Add onion and garlic cook 5 minutes or until soft
3. Add wine, capers, tomatoes and bay leaves, season with salt, pepper
4. Simmer stirring occasionally over low heat 15 minutes until thickened
5. Place flour in a shallow bowl and season. Dip sardines in flour mixture, shaking off excess
6. Place enough oil in a large fry pan to coat the base of the pan heat over medium heat
7. Fry sardines 3 minutes each side until golden and just cooked
8. Drain sardines on paper towel, transfer to a plate
9. Spoon over Santorini sauce, scatter with parsley and serve with lemon wedges
