15 boned sardines
15 black or green olives
1 garlic clove
1/2 onion
1 stick (4-inch) celery
1 tomato
1/2 yellow or green pepper
Spanish extra virgin olive oil


1. Slice garlic and chop up the celery and sweet pepper very fine
2. Peel and finely chop the onion
3. Peel and dice the tomato. Chop the olives
4. In a fry pan, soften garlic, celery, onion and peppers in olive oil
5. Leave a few minutes, add tomato, oregano and the olives
6. Season with salt and pepper and set aside
7. Rinse and drain the sardines
8. Open out a sardine, skin side down
9. Place a little of the cooked mixture on top
10. Roll up with the tail at the top, and place in an oiled baking dish
11. Repeat for remaining sardines
12. Bake in the oven, preheated to 200ºC, for a few minutes they cook almost straight away
13. Remove from the oven, sprinkle with chopped chives and serve
