1 kg Sardines fish cleaned and washed
Cooking oil for shallow frying
3 tablespoons of flour
1teaspoon of chilli powder (optional)
1/4 cup of olive oil
2 cloves of garlic minced
1 big onion sliced
1 teaspoon of fresh ginger chopped
1 teaspoon of tomato paste
4 tablespoons of vinegar
1/2 cup of tomato purée (skins and seeds removed)


1. Dredge fish with flour and fry in a shallow pan with cooking oil. Set aside
2. Sauté garlic, onion and ginger in 3 tablespoons olive oil
3. Add tomato paste, tomato puree and vinegar
4. Add fried fish and chili powder
5. Let it simmer over medium heat
6. Pour over rest of your olive oil
7. Season with Salt and pepper to taste
