4 x 100g Harpuka or Blue Eye fillets
1 small knob of ginger, peeled and finely sliced
1 cup of coriander leaves
4 kaffir lime leaves (very finely shredded)
2teaspoons red or yellow curry paste
1 whole lime juiced
150ml coconut milk
50ml water


1. Cut four large squares of baking paper
2. Place kaffir lime evenly divided between each square
3. Top a portion of fish and sprinkle with ginger and coriander
4. In a small jug mix coconut milk, water, lime juice and curry paste
5. Pour mixture evenly over fish
6. Fold ends of each square around fish to form a parcel
6. Steam fish parcels in a bamboo or metal steamer
7. Steam for approximately 10 minutes until cooked depending on thickness fish
