20-25 whole sardines
The zest of one lemon
1 tablespoon parsley, chopped
2 cups breadcrumbs
Kosher salt and freshly ground black pepper
1/4 cup of olive oil
1-1.5 cups of canola oil (for frying)


1. Once fish are cleaned give them a good rinse and dry with paper towel 
2. Mix breadcrumbs, zest, black pepper, salt and parsley in a large bowl
3. Drizzle with extra virgin olive oil and crumb fish ensure a good coating
4. Heat oil in large fry pan to 160% to 190% C brown each side of fish
5. Don’t need to deep dry fish
6. Sprinkle each sardine with additional salt when hot
7. Serve with wedges of lemon
Do not need to use eggs when crumbing this fish
Breadcrumbs adhere perfectly well to fish coated with olive oil
