Ingredients

1kg fresh sardines
1/4cup olive oil
1/2cup soft white breadcrumbs
1/4cup sultanas
1/4cup pine nuts
20g can anchovies drained and mashed
1/2teaspoon sugar
1 tablespoon finely chopped fresh parsley
2 spring onions finely chopped
Salt and freshly ground black pepper
Lemon wedges to serve

 Instructions 

1. Preheat oven to moderate 180°C.
2. Cut heads off fish. Split open belly and remove insides
3. Lever off each backbone with fingers by gently pulling away from flesh
4. Cut off at tail end of bone wash in salted water and dry on paper towel
5. Heat half the oil in a fry pan
6. Add breadcrumbs cook quickly until lightly brown
7. Drain crumbs on paper towel
8. Place half the crumbs in a bowl
9. Stir in sultanas, pine nuts, mashed anchovies, sugar, parsley, spring onions, salt and pepper
10. Stuff about 2 teaspoons of mixture into each sardine cavity
11. Place sardines side by side into a well, greased baking dish in a single layer
12. Sprinkle any remaining stuffing over top of fish with reserved cooked breadcrumbs
13. Drizzle reserved olive oil over top and bake 30 minutes
14. Serve sardines accompanied with lemon wedges
