12 Sardines or anchovies, cleaned
12 tablespoons white wine vinegar
Kosher salt, to taste
3/4 cup extra-virgin olive oil
1/3 cup fresh lemon juice
2 tablespoons chopped flat-leaf parsley
2 cloves garlic, minced


1. Remove Sardine head without piercing the fish all the way through
2. Use tip of the knife to loosen spine and remove bones from the flesh
3. Rinse cavity with a 1 tablespoon vinegar, transfer sardine to a small bowl
4. Lightly season cavity with salt. Repeat with remaining fish
5. Drain sardines and arrange in an 8" x 8" baking dish
6. In a small bowl, whisk together oil, lemon juice, parsley, and garlic
7. Pour marinade over sardines, massaging marinade into cavity of each fish
8. Cover dish with plastic wrap refrigerate overnight turning occasionally
9. When turned from red to white they are ready
10. To serve, transfer fish to small plates and serve with bread
