6 x 800g Pontiac potatoes, washed, peeled, chopped
125ml (1/2 cup) cream
l5g butter
2 garlic cloves, crushed
Salt & freshly ground white pepper
500ml (2 cups) water
250ml (1 cup) dry white wine
Brown onion, halved, thinly sliced
1 lemon, thinly sliced crossways
Fresh dill sprigs
6 black peppercorns
4 x 200g Salmon fillets
300ml bottle McCormick Simply Seafood Honey Mustard Sauce
Chopped fresh dill, to garnish
Tomato and rocket salad, to serve


1. Place potatoes in a saucepan and cover with plenty of cold water
2. Cover with lid and bring to the boil over high heat
3. Uncover and gently boil for 15 minutes or until tender
4. Drain potatoes and return to pan and mash until smooth
5. Add cream, butter and garlic, use a wooden spoon to beat until combined
6. Taste and season with salt and pepper
7. Place water, wine, onion, lemon, dill and peppercorns in a medium frying pan over high heat
8. Bring to the boil. Reduce heat to low and add salmon in a single layer
9. Poach, covered, for 5 minutes or until cooked to your liking
10. Use an egg I lifter to transfer salmon to a plate
11. Divide mash evenly among serving plates
12. Top with salmon and drizzle with McCormick Simply Seafood Honey Mustard Sauce
13. Sprinkle with dill and serve with tomato and rocket salad
