Ingredients

4 x 250g fillets of Blue Eye Cod skin on
2 tablespoons olive oil
1 tablespoon cumin seeds toasted
1 cup mint leaves sliced
Roasted Beetroot Salad
6 (1kg) medium fresh beetroots trimmed
½ cup Greek yoghurt
1 clove crushed garlic
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and cracked black pepper to taste
Skordalia
1 medium (200g) brushed potato peeled and chopped
3 cloves garlic crushed
2 tablespoons almond meal toasted
1 tablespoon lemon juice
1 tablespoon white wine vinegar
2 tablespoons water
1/3 cup extra virgin olive oil

Instructions

1. Wrap beetroots individually in foil and place on oven tray
2. Cook in a hot (200) oven for 1 hour or until tender
3. Cool and peel, cut into 2cm wedges and set aside
4. Combine the remaining salad ingredients in a small jug mix well
5. Cover and chill until serving
6. Boil, steam or microwave potato until tender and push through a fine sieve into a large jug
7. Add remaining ingredients except oil and whisk until smooth
8. Add oil a little at a time whisking until thick and smooth, season with salt and pepper
9. Toss fish in oil to coat and season with salt and pepper
10. Fry on medium heat skin down 4 minutes, turn and cook a further 2 minutes
11. Transfer to a moderate oven, cook 7 – 10 minutes until fish is just cooked through
12. Serve Skordalia, topped with fish
13. Serve beetroot drizzled with yoghurt mixture, sprinkle with cumin seeds and mint
