1 bunch asparagus, cut into 3cm lengths
1 1/2 sheets frozen puff pastry
2 tablespoons chopped fresh chives
3 x 59g eggs
2/3 cup sour cream
400g Salmon skin and bones removed (cut into 2cm cubes)


1. Fry salmon in a heated non-stick pan for 2 minutes or until lightly browned
2. Add asparagus fry 1-2 minutes until just tender, remove from heat
3. Cut the whole pastry sheet into 4 squares and the half sheet into 2 squares
4. Line 6 x 12cm pie dishes with the pastry squares and place on an oven tray
5. Divide salmon and asparagus mixture between pastry sprinkle with chives
6. Combine eggs and sour cream season with salt, pepper, whisk until smooth
7. Pour mixture over salmon in pastry cases, being careful not to overfill
8. Bake in a 190% preheated oven 15-20 minutes until filling set pastry golden 
9. Serve with a side of leafy salad
