Ingredients

2 tablespoons peanut oil
1 shallot (finely chopped)
3 garlic cloves (finely sliced)
2cm ginger (finely grated)
1/4 cup water
1/4 cup fish stock
1/4 cup shaoxing Chinese cooking wine
2 table spoons xo sauce
2 teaspoons sugar
4 x 180g salmon steaks skin removed
Salad
200g snow peas trimmed and thinly sliced
1 bunch coriander
2 finely shredded green onions
1 bird’s eye chili finely chopped

 Instructions 

1. Heat half the oil in a wok or large frying pan on medium heat
2. Stir fry shallots 1-2 minutes until tender
3. Add garlic and ginger stir fry 30 seconds until fragrant
4. Stir in water, stock, wine xo sauce and sugar
5. Bring to a simmer cook 1-2 minutes until slightly thickened
6. In a bowl toss all salad ingredients together
7. Heat remaining oil in frying pan on high.
8. Season salmon to taste cook 3 minutes turn and cook a further 2-3 minutes to taste.
9. Spoon sauce over salmon and top with salad
