5 eggs
100g cottage cheese
1/2 brown onion finely chopped
200g smoked salmon
1 bunch fresh asparagus
1/2 bag baby spinach
Small handful of dill


1. Whisk together eggs and cottage cheese until eggs are slightly fluffy
2. Add onion, salmon, spinach and dill
3. Heat an oven proof pan, sauté asparagus for 2 minutes in some olive oil
4. Pour over egg mixture and cook for a further 2 minutes
5. Place the pan under a hot grill to set mixture and brown
6. Serve with side salad
