Ingredients

150gdried thick rice noodles
1 bunch bok choy (or Asian greens of your choice)
1 large carrot, peeled and shredded
4 green shallots, sliced
1/3 cup sweet chili and lime dressing, approximately
450g Salmon

 Instructions 

1. Steam, pan fry or barbecue salmon until just cooked cool slightly
2. Refrigerate until chilled
3. Remove skin and bones from salmon and break into chunky flakes
4. Cook noodles as directed on packet
5. Drain and rinse under cold water
6. Divide noodles, bok choy, carrot and shallots between serving bowls
7. Top with flaked salmon
8. Drizzle with dressing
Serves 4
