2 (about 200g each) salmon steaks
30g butter
1 tablespoon olive oil
8 slices continental bread, cut into 2crn cubes
150g baby cos lettuce leaves, washed, dried
2 hard-boiled eggs, peeled, quartered
1 red onion, halved, thinly sliced
50g ('1/4 cup) drained capers
1/4 cup loosely packed fresh dill sprigs
1 x 300ml bottle McCormick Simply Seafood Creamy Lemon
Dill Cooking Sauce
45g (1/2 cup) finely grated parmesan


1. Poach salmon in a medium pan of simmering water 5 minutes until cooked through
2. Remove from heat. Transfer to a plate and set aside for 5 minutes to cool
3. Use a fork to flake salmon into large pieces
4. Heat butter and oil in a medium frying pan over medium-high heat
5. Add bread and cook, stirring occasionally, for 2 minutes or until golden
6. Transfer croutons to a plate lined with paper towel
7. To serve, arrange lettuce, salmon, eggs, onion, capers and dill on serving plates
8. Drizzle generously with Cooking Sauce
9. Sprinkle with croutons and parmesan
