Ingredients

2 Lebanese cucumbers
1 avocado
120g packet rocket and spinach salad leaves
4 radishes, thinly sliced
200g Tasmanian Smoked salmon
1/3 cup aioli chilled
2 spring onions sliced
Rye bread toasted to serve

Instructions 

1. Halve cucumbers length ways
2. Scoop out seeds using a teaspoon and discard, slice on angle
3. Halve avocado remove stone and scoop out flesh with a spoon
4. Pile salad leaves onto serving plates top with cucumber, avocado and radish
5. Add slices of smoked salmon drizzle with aioli and garnish with spring onions
6. Serve with rye toast
