800g Kipfler potatoes, scrubbed
1 small red onion, finely chopped
2 tablespoons coriander leaves, chopped
2 tablespoons flat-leaf parsley leaves, chopped
2 tablespoons olive oil
4 x 200g Ocean Trout steaks, skin on
2 teaspoons ground white pepper
1 tablespoon chilli jam
2 small red chillies, deseeded, thinly sliced
1/4 cup brown sugar
1 tablespoon fish sauce
1 small lime, juiced


1. Cook potatoes in saucepan salted boiling water 15 minutes until just tender
2. Drain. Cool. Cut into thick slices.
3. Combine potato, onion, coriander, parsley, 1 tablespoon oil, salt and pepper 
4. Cover set aside
5. Rub white pepper over both sides of trout
6. Heat remaining oil in a large frying pan over medium-high heat
7. Cook fish, skin side down, for 3 minutes or until skin is crisp
8. Turn and cook for 1 to 2 minutes or until cooked to your liking
9. Transfer to a plate. Cover and let stand
10. Reduce heat to low. Add chilli jam, chilli, sugar and fish sauce to pan
11. Simmer for 2 minutes. Add 2 tablespoons lime juice and simmer for 1 minute
12. Place Trout on plates. Drizzle with warm chilli lime sauce
13. Serve with potato salad
