Ingredients

8 x 120g Ocean Trout steaks skin removed
1 1/2 cups grape seed oil
8 cloves garlic peeled and bruised with a knife
1/2 cup basil leaves
1 small bulb fennel trimmed finely shredded
1 bunch coriander leaves picked
1 lime rind finely grated and juiced
1 teaspoon white sugar

Instructions 

1. Preheat oven to 90% c or 70% fan forced
2. Remove all fine bones from trout with clean tweezers
3. Pour oil into large baking dish lay trout in oil in a single layer
4. Top with garlic and basil, season with salt and pepper
5. Cover, bake 30-35 minutes
6. Remove from oven set aside to reach room temperature
7. Toss together fennel and coriander
8. Combine lime juice, rind and sugar add to fennel toss to combine and chill
9. When ready to serve, remove trout from oil bath and arrange on serving platter
10. Add 1 tablespoon of the oil to fennel mixture, toss to combine
11. Pile over trout and serve at room temperature
