750g Ocean Trout steaks
1 teaspoon red curry paste
270ml can coconut milk
2 teaspoons lime juice
1 teaspoon fish sauce
1/2 cup finely chopped fresh coriander


1. Cut ocean trout steaks lengthways into 1.5cm strips
2. Thread onto greased bamboo skewers
3. Place curry paste in a saucepan gradually stir in coconut milk
4. Bring to the boil
5. Reduce heat simmer uncovered about 5 minutes until sauce thickens slightly
6. Stir in juice, fish sauce, coriander keep warm on low heat while skewers cook
7. Barbecue or grill skewers until trout is just cooked through
8. Serve with coconut lime sauce
