Ingredients

12 mussels, scrubbed and de-beared
2 table spoons olive oil
1 onion finely chopped
1 carrot finely chopped
1 red chilli seeded and chopped
2 cloves garlic crushed
425g can tomatoes crushed
1/2 cup white
1 teaspoon sugar
Pinch cayenne pepper
1/4 cup white wine extra
1/4 cup fish stock
1 extra clove garlic crushed
30g butter
125g calamari rings
125g boneless white fish fillets cut into cubes
200g green prawns shelled and de-veined
1/2 cup fresh parsley chopped
200g fresh or can clams drained
375g spaghetti

 

 

Instructions

1. Soak cleaned mussels for 2 hours in cold water discarding any opened or damaged mussels.
2. Heat oil in a medium pan add onion and carrot stir over medium heat 10 minutes or until lightly browned
3. Add chilli, garlic, tomato, white wine, sugar and cayenne pepper. Simmer uncovered 30 minutes stirring occasionally
4. Heat extra wine, stock and garlic in a large pan, add mussels cover and shake over high heat for 3-5 minutes
5. After 3 minutes start removing opened mussels and set aside. After 5 minutes discard any unopened mussels, reserve wine mixture
6. Melt butter in a frying pan, add calamari rings, fish and pawns, stir-fry for 2 minutes and set aside keeping warm
7. Add wine mixture, parsley, cooked seafood and clams to tomato sauce, reheat gently
8. Cook pasta in a large ant of boiling water until tender, drain and combine with sauce
Note: Tomato sauce may be made ahead of time
