4 x 200g skinless salmon steaks
2 tablespoons olive oil
1 orange grated rind and juiced
1/4 cup (40g) raisins
3 red capsicum, halved, each half cut into thirds
2 tablespoons pine nuts
1/4 cup chopped flat leaf parsley


1. Place salmon, oil and orange rind in a large bowl
2. Season and turn to coat salmon in marinade
3. Cover with plastic wrap and refrigerate 1 hour to marinate
4. Combine orange juice and raisins in a small bowl and stand to soak
5. Preheat oven to 200C or 180C fan
6. Place capsicum in a large baking dish
7. Drizzle with remaining oil and season
8. Roast 30 minutes, until just tender
9. Place pine nuts in a single layer on a baking tray
10. Toast in oven for 3-4 minutes, until golden
11. Place salmon and raisins on top of capsicum and pour over marinade
12. Scatter over pine nuts and season with salt
13. Bake 12-15 minutes, until salmon is just cooked through
14. Scatter with parsley to serve
