4 x 200g fillets Red Emperor fillets (skin on)
3 tablespoons vegetable oil
Salt and pepper
200g very ripe Roma tomatoes (diced)
8 large basil leaves (finely sliced)
3 tablespoons red shallots (finely chopped)
1 large red chilli (deseeded and finely diced)
2 tablespoons extra-virgin olive oil
Zest of 1/2 lemon
Pinch sea salt
Pinch cracked black pepper


Preheat BBQ for 10 minutes on low
1. Spread 2 tablespoons vegetable oil on barbecue plate, leave for 5 minutes
2. Add remaining 1 tablespoon vegetable oil to barbecue plate
3. Dry red emperor fillets with paper towel
4. Score red emperor fillets with sharp knife, 1mm deep
5. Season with salt and pepper on skin side
6. Still on low heat, place fillets on barbecue plate skin side down for 5 minutes
7. Refrain from prodding or touching fillets, allow skin to crisp
8. Turn fillets over, close lid on BBQ for 6-8 minutes or until cooked

Combine all ingredients in bowl
Spoon over fillets and serve immediately
