60g butter
2 slices bacon, finely chopped
1 leek, finely chopped
1 carrot, peeled and finely chopped
1 celery stalk, finely chopped
1 large potato, peeled and chopped
1/3 cup plain flour
4 cups hot fish stock
400 g firm white fish, skinned, boned and cut into 2 cm cubes
250 g scallops, cleaned
200 g small prawns, shelled, deveined
1 cup cream
1/3 cup finely chopped fresh parsley
Salt and freshly ground black pepper
Extra finely chopped parsley, to garnish


1. Heat half the butter in a large pan, add bacon, cook on low heat 5 minutes
2. Remove bacon from pan reserve, add remaining butter, stir in leek, carrot, celery and potato
3. Cook on medium heat, stirring frequently 5 minutes until vegetables softened and lightly golden 
4. Add flour, cook 1 minute and add heated fish stock gradually
5. Cook stirring 5 minutes or until mixture boils and thickens
6. Simmer over a low heat for 5 minutes, uncovered, stirring occasionally
7. Add fish portions cook 5 minutes stirring frequently, add scallops, prawns, cream, parsley and reserved bacon
8. Mix well cook 5 minutes without boiling, add salt and pepper to taste
9. Serve immediately garnished with finely chopped fresh parsley
Note: Chowder may be made up to step 3 several hours ahead
Cook fish and seafood just before serving 
Chowders are hearty soups and make a delicious and filling meal when served with crusty bread
