60ml (¼ cup) peanut oil
3 kaffir lime leaves, shredded
2 stalks lemongrass, bruised, tied in a knot
2 x 5mm slices ginger
1 bay leaf
2 tablespoons fish sauce
400ml coconut cream
Salt and pepper, to season
4 x 150g skinless red emperor fillets
Steamed rice, to serve
Chopped chilli, to serve
Chopped coriander, to serve
Lime cheeks, to serve
Curry Paste
3 garlic cloves, peeled
3 shallots
1 chilli, chopped, plus 2 extra, deseeded
2 lemongrass stalks, thinly sliced
1 tomato, chopped
2cm-piece ginger, grated
2cm-piece galangal, grated
6 macadamias
4 coriander stems and roots, finely chopped
Pinch of nutmeg
1/2 teaspoon shrimp paste
1 teaspoon tamarind puree
1 tablespoon grated palm sugar
1 tablespoon ground turmeric
1 tablespoon peanut oil


1. To make curry paste, place all ingredients in a food processor and process until a smooth paste forms. Heat oil in a large wok over medium heat
2. Add lime leaves, lemongrass, ginger and bay leaf and cook for 1 minute, add curry paste stirring 2 minutes or until fragrant
3. Add fish sauce and coconut cream and bring to a simmer. Cook 10 minutes. Season with salt and pepper
4. Add fish cook 5 minutes or until just cooked through. Arrange rice on serving plates. Remove fish from wok and place on rice
5. Strain sauce and discard solids. Place chilli and coriander over fish and serve with lime cheeks and sauce on the side
