Ingredients

4 x 170g Red Emperor fillets
3/4 cup unsalted roasted cashew nuts
3 sprigs fresh coriander (finely chopped)
salt and freshly ground pepper
16 single stems broccolini
1x punnet cherry tomatoes
12 baby gourmet potatoes
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon lemon zest
150ml sour cream

Instructions 

1. Crush nuts with a pestle and mortar until roughly crushed
2. Add finely chopped coriander and cracked pepper, mix well
3. Lightly dress fish in 1 tablespoon olive oil salt and pepper
4. Cut potatoes into uniform wedges (skin on) and steam
5. Add broccolini and steam for a few minutes
6. Add cherry tomatoes towards the end just to soften them slightly
7. Combine half a teaspoon of cumin and half a teaspoon lemon zest
8. Add to the sour cream to dress potatoes
9. Combine remaining cumin and lemon zest with 1 tablespoon olive oil to dress tomatoes
10. Heat pan and sear fish on medium heat until brown on both sides, then place on flat baking dish
11. Spread nut mixture evenly onto all fillets and place under grill until lightly brown
12. Place potatoes evenly on plate, rest broccolini and fish on top
