2 fillets Red Emperor
4 slices of fresh ginger
1 tablespoons tamari
1 tablespoon Szechuan pepper
2 tablespoons sesame seeds
2 tablespoons Shiro miso paste
1/2 cup fresh orange juice
1 tablespoon coconut palm sugar
1 tablespoon tamari
1 tablespoon rice wine vinegar
1 tablespoon mirin
1 tablespoon ginger, grated
2 spring onions, finely chopped
1 tablespoon chives, chopped


1. Place fish in a deep pan and cover with water
2. Add ginger, tamari and sezchuan pepper
3. Poach fish over a gentle simmer for about 5 minutes
4. Grind sesame seeds either in a mortar and pestle or spice/coffee grinder
5. Place in a bowl OJ, sugar, vinegar, mirin, ginger mix with miso paste
6. Taste and adjust as you like
7. To serve, place fish in a shallow bowl pour over sauce
8. Scatter with spring onions and chives
9. Serve with extra sauce on the side and garnish with orange wedges
