500g King prawns
100g smoked salmon
3 teaspoons salted capers
1/4cup lemon juice
1/4cup virgin olive oil
1/4 teaspoon fresh cracked black pepper


1. Peel and devein cooked prawns leaving tails in tact
2. Cut smoked salmon into 1.5cm strips
3. Wrap a strip smoked salmon firmly around each prawn place in a shallow dish
4. Rinse capers to remove salt and chop finely
5. Make marinade by whisking together lemon juice, olive oil, capers and pepper
6. Pour marinade over prawns, cover and refrigerate for at least 1 hour
7. Remove prawns from marinade to serve
