Ingredients

150g skinless fish fillet
300g fresh raw prawns, shelled and deveined
2 egg whites, lightly beaten
I tablespoon light soy sauce
1/2 teaspoon white pepper
1/2 cup fresh or canned water chestnuts, finely chopped
2 spring onions/shallots, white parts only finely chopped
4 Large slices white bread
1-2 tablespoons sesame seeds, to sprinkle
2 cups vegetable oil, for deep frying
sweet and sour sauce or sweet Chili sauce, to serve

Instructions 

1. Roughly dice fish and prawns, place in a blender or food processor
2. Add egg whites, soy sauce and pepper
3. Process to a smooth paste removing any thread like strands from the mixture
4. Add chestnuts, spring onions
5. Using pulse setting to mix into the prawn mixture
6. Transfer to a bowl and squeeze mixture through fingers until a soft silky texture
7. Spread mixture thickly over slices of bread
8. Sprinkle sesame seeds thickly over the top pressing down lightly
9. Remove crusts and cut into triangles
10. Heat oil medium-hot in a pan or wok
11. Place toasts in wok mixture side down
12. Cook until golden turning once
13. Drain on paper towel and serve
