1kg medium prawns peeled, dev-veined
1 small onion chopped
1 red capsicum chopped
2 medium tomatoes
1/2 cup frozen peas
3 cloves garlic finely chopped
4 cups chicken stock
1/4 cup olive oil
1/2 teaspoon saffron soaked in 2 tablespoons hot water
2 cups uncooked long grain rice
2 tablespoons chopped parsley


1. Heat oil in a large fry pan
2. Add onion, garlic and capsicum cook on medium heat 2-3 minutes
3. Stir in rice and mix well
4. Add stock, saffron and tomatoes mix well and bring to the boil
5. Reduce heat to a simmer cook uncovered 15 minutes without stirring
6. Add prawns and peas on top of rice
7. Cover cook a further 10 minutes or until rice is tender and stock is absorbed
8. Sprinkle with parsley and serve
