1kg green prawns (peeled and deveined)
1 onion (finely chopped)
3 cloves garlic (finely chopped)
4cm piece ginger (peeled and grated)
3 tablespoons vegetable oil
Steamed basmati rice
Chopped coriander leaves
Korma Mixture
1 cup plain yoghurt
300ml coconut cream
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala
1 teaspoon ground paprika
1 teaspoon ground turmeric
½ teaspoon chilli powder
1 tablespoon tomato paste
4 tablespoons desiccated coconut


2 cloves garlic, crushed
2 teaspoons Dijon mustard
3/4 cup cream
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh oregano
Salt and pepper, to taste


1. In a bowl combine korma mixture ingredients. Add prawns coat and refrigerate for 30 minutes
2. Heat oiled pan on medium heat add onion cook 2-3 minutes to soften, add garlic and ginger cook 30 seconds
3. Add prawns and korma mixture, cook 5-6 minutes until prawns are cooked through
4. Sprinkle mixture with chopped coriander leaves and serve with rice and pappadums
