Ingredients

18 large green prawns
3 cloves garlic crushed
1 tablespoon olive oil
2 tablespoons lemon juice
6 bacon rashers
12 thin slices crusty bread
2 baby cos lettuce
1 radicchio lettuce
1/2 cup shaved parmesan

Dressing

2 cloves garlic, crushed
2 teaspoons Dijon mustard
3/4 cup cream
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon chopped fresh oregano
Salt and pepper, to taste

Instructions 

1. Shell and devein prawns, leaving tails intact
2. Place in a bowl with garlic, olive oil and lemon juice mix well
3. Cover and refrigerate for 1 hour
4. To make dressing, place garlic and mustard in a bowl, whisk in cream until combined. Whisk in remaining ingredients
5. Cook prawns on a heated, oiled grill pan or barbecue hotplate. Cook until lightly browned and cooked through
6. Remove and set aside. Cook bacon on same grill pan until slightly crispy, remove and set aside
7. Add bread to same grill pan and toast on both sides. Place washed lettuce leaves in a large bowl, add prawns, bacon, bread and parmesan
8. Drizzle with dressing
