Ingredients

1 tablespoon olive oil
1 red capsicum seeded and chopped
2 garlic cloves crushed
1 bird’s eye chilli chopped
1 teaspoon ground paprika
500g green prawns peeled deveined tails in tact
1 lemon grated zest and juice
1 tablespoon chilli sauce
50g baby spinach leaves
1/2 cup parsley leaves torn
Cooked brown rice to serve

Instructions 

1. In a large fry pan heat oil on high saute capsicum and garlic 1-2 minutes
2. Add chilli and paprika cook a further 1-2 minutes stirring
3. Add prawns toss to coat cook 3-4 minutes until prawns have changed colour
4. Toss zest, juice, chilli sauce through prawns cook further 1-2 minutes stirring
5. Remove from heat stir through spinach and parsley
6. Serve with rice
