Ingredients

500g Fish, skinned, boned cut into 1 cm cubes
200 g small scallops, cleaned
3/4 cup lemon juice
1 small red onion finely chopped
1 red chilli, seeded and finely chopped
1-2 cloves garlic, crushed
2 tomatoes seeded and chopped
1 tablespoon chopped fresh coriander
1 small cucumber seeded, chopped into 1cm cubes
1/4 cup coconut cream
Salt and freshly ground black pepper
3 avocados
Fresh chives, to serve

Instructions

1. Combine fish, scallops, juice, onion, chilli and garlic in a ceramic or glass bowl
2. Cover with plastic wrap and chill for at least 6 hours or overnight if possible
3. Stir mixture occasionally with metal spoon take care not to break delicate fish 
4. Just before serving drain juice from seafood mixture and discard
5. Add tomato, coriander, cucumber, coconut cream, salt and pepper to mixture
6. Stir gently until just combined
7. Halve avocados and remove stone, roughly chop add to salad mixture
8. Serve garnished with whole chives on a bed of radicchio lettuce, if desired
9. The basis of the dish is raw fish marinated in lemon juice, or sometimes lime juice (or a mixture of the two)
10. During this time the acid in the juice acts to 'cook' the fish flesh, which gradually becomes opaque
11. Ceviche is usually served as a light, fresh first course, but it is also good on the buffet table or as part of a mixed seafood platter
