Ingredients

1kg Green prawns in the shell
2 teaspoons Japanese soy sauce
1 teaspoon sesame oil
Dipping Sauce
3 tablespoons Japanese soy sauce
4 slices fresh ginger shredded
2 stalks shallots shredded
1 red chilli deseeded and shredded

Instructions 

1. Wash prawns and soak in iced water for 10 minutes
2. Drain and toss in soy sauce and sesame oil
3. Bring a large pan of water to the boil, sized to fit steamer basket
4. Place prawns in steamer over boiling water cover and steam 5 minutes only
5. Combine dipping sauce ingredients when prawns are steamed
6. Add 2 tablespoons of steaming liquid to dipping sauce, serve immediately
