1 large mango cheek, peeled, finely chopped
1/2 small Lebanese cucumber, peeled, finely chopped
1 tablespoon finely chopped red onion
5 large fresh basil leaves, torn
12 (1 dozen) natural oysters (such as Sydney rock oysters), in the half shell


1. Combine mango, cucumber, onion and basil in a small bowl
2. Taste and season with salt and pepper
3. Arrange oysters on a serving platter
4. Divide mango mixture among oysters and serve
