300ml champagne or sparkling white wine
2 green shallots, finely chopped
300ml double cream
18 natural oysters, in the half shell
Freshly ground white pepper
Chopped fresh chives, to serve


1. Place champagne and shallots in a small saucepan over medium-high heat
2. Bring to the boil. Simmer for 5-8 minutes or until mixture reduces by half
3. Reduce heat to medium-low
4. Add cream and any juice from the oysters
5. Season with white pepper
6. Simmer 20 minutes until sauce reduces by half should have 300ml of sauce
7. Preheat grill to high
8. Divide oysters, in their shells, among 6 small gratin dishes
9. Pour over cream sauce
10. Place gratin dishes on a large tray
11. Cook under grill 3 minutes or until oysters are golden and sauce bubbles
12. Cool for 2 minutes
13. Sprinkle with chives and serve
